Janine Kirk AM was the founding Chief Executive of The Prince's Trust Australia (now the Princes Trust Global Group), a not-for-profit built under the guidance of His Royal Highness, the Prince of Wales, and in March 2019 was appointed Chair of Phoenix Australia, the Centre for Post-traumatic Mental Health. Janine is also Chair of The Melbourne Prize Trust and Tourism Victoria - given recent events in Victoria, Janine was a timely and insightful speaker, greatly enjoyed by guests.

The February luncheon featured a new Tripe-based entree and main course (below) designed by the fine chefs of the RACV Club, alternating with the traditional main dish and followed by an array of cheese and refreshments.

Braised tripe and pig trotter salad, chickpeas & pecorino

Florentine tripe, potato & rosemary gnocchi

Ox tripe in white onion sauce, creamy mash, green peas, saute bacon & parsley

Cheese

Australian cheese selection, fig jam, walnut bread & crackers

 

Freshly brewed coffee, tea & herbal infusions with cookies & pralines

A selection of wines

 

(Non-tripe entree consisted of miso-roasted mushroom, potato & chestnut salad with pickled red onion & watercress, and for main course potato gnocchi, beef cheek & fresh Parmesan cheese
